Dilly Beans

Ingredients

  • 2 pounds green beans trimmed
  • cayenne peppers (1/8 teaspoon in each jar)
  • 4 cloves of garlic
  • 4 heads of dill
  • 1 tsp. ground pepper (1/4 teaspoon in each jar)
  • 2 1/2 cups water
  • 2 1/2 cups vinegar
  • 1/8 cup of salt

Preparation

Step 1

Pack beans in hot jar leaving 1/4 inch head space. To each pint add 1/8 teaspoon cayenne pepper, 1/4 teaspoon ground pepper, 1 clove of garlic and 1 head of dill. Combine remaining ingredients and bring to boil. Pour boiling hot over beans leaving 1/4 inch head space.

Let stand for 2 -4 weeks to allow flavor to develop.

Makes about 4 pints.
