Beef and Bean Oven Tacos
Heating these tacos in the oven makes the cheese melt deliciously into the filling!

Ingredients
- Toppings or side suggestions:
- 1 pound lean ground beef
- 1 small onion, finely chopped
- 2 cups cooked (or canned) black beans
- 2 T taco seasoning
- 1 15-oz can diced tomatoes, drained
- 8 taco shells (I like the standup corn taco shells)
- 1 cup shredded cheese
- shredded lettuce, salsa, avocado chunks, guacamole, corn
Preparation
Step 1
Preheat the oven to 350 degrees.
Brown the ground beef with the chopped onion over medium heat. Once browned, drain well. Stir in the black beans, taco seasoning, and diced tomatoes, and let simmer over medium-low heat for 5 minutes.
Line up 8 taco shells in a 7 x 11 inch baking dish (or an 8 x 8 for four tacos). Spoon meat mixture into the taco shells. Top with a few teaspoonfuls of cheese. Bake in the preheated oven for 10 minutes, or until cheese melts.
Serve with toppings and a side of veggies.
Makes 4 servings.
