Teriyaki Turkey Lettuce Wraps

Ingredients

  • 1 lb ground turkey
  • 10 oz shredded carrots
  • 4 to 5 scallions sliced
  • 1/4 c. to 1/3 c.teriyaki sauce
  • 1 head of lettuce

Preparation

Step 1

In a large skillet heat 1 T olive oil over low heat. Add turkey and cook breaking meat with a spoon until browned about 4 minutes. Stir in carrots, scallions and 1/4 c. water lower heat to medium low. Cover loosely with foil and cook till water is absorbed and veggies are soft, about 4 minutes. Stir in teriyaki sauce to taste and cook until heated through about 4 minutes. Divide the mixture among the lettuce leaves and rollup.
