Black Beans and Rice

Ingredients

  • 1 tbsp olive oil
  • 3/4 cup finely chopped onion (1 onion, smallish)
  • 1/2 cup diced green pepper chopped fine (1 pepper)
  • 1 cup tomatoes, diced (1 14 oz can)
  • 1 can seasoned black beans, drained with juice reserved
  • 1/2 tsp thyme
  • 1 tsp garlic salt
  • 3 tbsp cider vinegar
  • 1/2 tsp hot pepper sauce
  • 2 cups cooked rice
  • Lime wedges (optional)

Preparation

Step 1

In large skillet, cook onion and green pepper in olive oil for 5 to 6 minutes.
Stir in tomatoes, beans, thyme and garlic salt and cook 3 minutes.
Add vinegar, pepper sauce, reserved juice and cook 5 minutes more.
Serve over rice.
