Blueberry Muffins

Ingredients

  • 1-3/4 cups flour
  • 1/4 cup sugar plus 2 Tbsp.
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 beaten egg
  • 3/4 cup milk
  • 1/3 cup cooking oil
  • 1 cup blueberries (thaw if frozen)
  • (2 Tbsp lemon peel if desired)

Preparation

Step 1

In a large mixing bowl stir together the flour, sugar, baking powder and salt. Make a well in the center. Combine egg, milk and oil. Add egg mixture all at once to flour mixture. Stir just till moistened: batter should be lumpy. Fold in blueberries. Line muffin tin with paper cups and fill 2/3 full. Bake at 400 for 20-25 minutes or till golden brown.

Makes 10-12 muffins.
