Coconut-Custard-Yam Pie

Ingredients

  • 2 Cups Mashed Yams
  • 3 Eggs
  • 1/2 Cup Sugar
  • 1/4 Cup Brown Sugar, firmly packed
  • 1 tsp. Salt
  • 1 tsp. Cinnamon
  • 1/2 tsp. Nutmeg
  • 1/4 tsp. Ginger
  • 1/8 tsp. Cloves
  • 1 Cup Cream or Evaporated Milk
  • 1 1/2 Cup Coconut

Preparation

Step 1

In a large bowl, beat eggs with sugar, salt and spices. Add yams and cream; mix well. Fold in coconut.
