Hummus bi Tahini

This recipe comes from a very old cookbook, from the Lebanese Church Ladies' Guild, from Cleveland, OH. This is a VERY traditional Lebanese hummus recipe.

Ingredients

  • 1 19oz can chick peas (or dried peas, soaked overnight)
  • 2 cloves garlic, crushed
  • 1/3 cup tahini
  • 1/3 cup lemon juice, or to taste
  • 2 tbsp olive oil
  • 1 tbsp chopped parsley
  • 1 tsp salt
  • Dash paprika

Preparation

Step 1

Drain water from chick peas, reserving 1/3 cup of the liquid. Pour all ingredients, except parsley and oil, into blender. Add the 1/3 cup of liquid and puree for a few minutes. Pour onto shallow platter. Garnish with chopped parsley and olive oil and paprika.
