Chicken Casserole With Potatoes, Bacon and Onion

Ingredients

  • butter spray
  • 1 tablespoon vegetable oil
  • 8 boneless skinless chicken things
  • 4 slices center bacon chopped
  • 4 large russet potatoes
  • 2 large onions, sliced
  • salt and pepper, to taste
  • 2 teaspoons chopped fresh thyme ( or 1/2 tsp dried thyme)
  • 2 cups chicken stock

Preparation

Step 1

Peel potatoes, cut in half, place in covered casserole with 1/4 cup chicken broth and microwave until partially cooked (approx 5 minutes). Set aside. Once cool, slice into 1/4" slices
Heat oil in large saucepan. Add onion slices and bacon and cook 5-10 minutes. Remove from heat.
In same pan add chicken thighs, season with salt and pepper and brown, remove from pan
Spray bottom of oven proof casserole dish with butter spray. Layer half of the potatos in bottom, then add half of onion and bacon. Season well with salt and pepper and the thyme.
Add chicken on top and then add the remaining onion mixture, topping with remaining potatoe slices, seasoning with salt and pepper
Add 2 cups chicken stock.
Cover and bake at 350 F for 1 1/2 hours
