Ingredients
- 1 1/2 cups flour
- 1 1/2 cups quick cooking oats
- 1 1/2 cup white sugar
- 1/2 tsp baking soda
- 3/4 cup cold butter
- 3 cups fresh or frozen blueberries
- 2 Tbs cornstarch
- 2 Tbs lemon juice
- cinnamon
- 1 tsp vanilla extract
- 1/2 tsp salt
Preparation
Step 1
Combine flour,oats,1 cup sugar and baking soda. Cut in butter until mixture resembles coarse crumbs. Reserve 2 cups for topping.Press remaining crumb mixture into a 9x13 pan. Set aside.
In a pot,combine blueberries,cornstarch,lemon juice and remaining sugar. Bring to a boil,boil for 2 min,stirring constantly. Spread evenly over the crust. Sprinkle with the remaining crumb mixture. Bake at 375 for 25 min. or until lightly browned. Cool before cutting.
