Step 1
Bruise 12 mint leaves on the bottom of a cocktail shaker, add 3 tbps fresh squeezed lime juice, 3 tbps pineapple juice and shake together. Then pour equal amount of mixture into bottom of 10 small plastic cups or shot glasses. Then in a medium bowl combine 1 box lime gelatin and 1 box pineapple gelatin and 1 tsp sugar. Stir in 1 c boiling water and whisk unil the sugar disolves. Stir in 1/4 c light rum and pour into the glasses. Refrigerate until set, about 3 hours.
WE TRIED THIS 6/15/13 AND THEY WERE VERY GOOD.
