Ingredients
- 6 c diced watermelon
- 2 c cooked wheat berries
- 2 c boiled edamame
- Chopped Mint
- 3 T crumbled feta cheese
- 3 T minced red onion
- 1.5 T EVOO
- 2 t balsamic vinegar
- Salt
- Pepper
Preparation
Step 1
1. Toss watermelon, wheat berries, edamame, mint, feta cheese, red onion, EVOO, balsamic vinegar, & salt & pepper to taste.
2. Divide between 2 bowls.
