Ingredients
- 1/2 c ricotta
- 1/4 c chopped basil
- 3 T honey
- 1/4 t finely grated lemon zest
- 1/4 t vanilla extract
- 3/4 c granola
- 1/2 c shredded coconut
- 1 T melted butter
- 3 nectarines, cut into 1/2"-thick wedges
- 6 oz blackberries
Preparation
Step 1
1. Preheat oven to 350F.
2. Butter an 8" square glass baking dish.
3. In a med bowl, mix ricotta, basil, honey, lemon zest & vanilla extract.
4. In another med bowl, mix granola, coconut, & butter.
5. Arrange nectarines in prepared dish & scatter the blackberries.
6. Dollop w/ricotta mixture & sprinkle w/granola.
7. Bake until top is golden & fruit is bubbly, 20 min.
8. let rest 5 min before serving.
