Ingredients
- 2 T EVOO
- 6 chopped leeks
- 6 c fresh or thawed frozen peas
- 8 c chicken stock
- Salt
- Pepper
- Sour Cream
- Lemon Zest
Preparation
Step 1
1. In a large Dutch oven, heat EVOO over med heat. Add leeks (white & light green parts only) & saute 5 min. Add peas & stock. Simmer 15-20 min, until veggies are tender.
2. Using a blender, puree until smooth. Season w/salt & pepper. Serve w/a dollop of sour cream & lemon zest.
