White Bean Tuna Pita

Ingredients

  • 6 oz albacore tuna
  • 1 c drained cannellini beans
  • 2 T thinly sliced red onion
  • 2 T chopped mint
  • 2 T chopped basil
  • EVOO
  • 2 t balsamic vinegar
  • 2 T grated Pecorino Romano cheese
  • Salt
  • Pepper
  • 2 small whole-wheat pitas
  • 1 c arugula
  • Lemon juice
  • Sea salt

Preparation

Step 1

1. Mix tuna, beans, red onion, mint, basil, balsamic vinegar, & cheese; season w/salt & pepper to taste.
2. Stuff each of the pitas with 1/2 of the tuna mixture.
3. Serve each w/arugula, drizzled w/EVOO, lemon juice, & a pinch of sea salt.
