Ingredients
- 6 oz albacore tuna
- 1 c drained cannellini beans
- 2 T thinly sliced red onion
- 2 T chopped mint
- 2 T chopped basil
- EVOO
- 2 t balsamic vinegar
- 2 T grated Pecorino Romano cheese
- Salt
- Pepper
- 2 small whole-wheat pitas
- 1 c arugula
- Lemon juice
- Sea salt
Preparation
Step 1
1. Mix tuna, beans, red onion, mint, basil, balsamic vinegar, & cheese; season w/salt & pepper to taste.
2. Stuff each of the pitas with 1/2 of the tuna mixture.
3. Serve each w/arugula, drizzled w/EVOO, lemon juice, & a pinch of sea salt.
