- Beef Tenderloin
- Thyme, salt and pepper
- Mushrooms
- Bernaise Sauce
Preparation
Step 1
Preheat oven to 415. Brush the tenderloin with olive oil and rub all over with the pepper and thyme. Sprinkle with salt.
Place the tenderloin on a rack in a shalling roasting pan and roast it for 15 minutes. Reduce the oven to 350 and roast for 20 minutes for medium rare; roast 5 minutes longer for mediu. Let the tenderloin rest for 15 minutes before carving.
Slice the tenderloin 1/2” thick and arrange on a platter. Serve with sauteed mushrooms and/or Bernaise sauce.
