Ingredients
- 1 c vegetable oil
- 2/3 c water
- 4 eggs
- 16 oz pumpkin filling
- 1 c baking raisins
- 1 c chopped pecans
- 3 1/3 c flour
- 3 c sugar
- 2 tsp baking soda
- 1 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp nutmeg
Preparation
Step 1
Preheat oven to 325 degrees.
Combine oil, water, eggs & pumpkin and stir till blended. Combine remaining dry ingredients. Add liquid and blend by hand. Stir in raisin/nut mixture. Spoon into two greased loaf pans (9 X 5) and bake for 1 hr 25 mins or until toothpick dipped in center comes out clean. Cool on wire rack.
