Pumpkin Roll

Ingredients

  • Filling:
  • 3 lg eggs
  • half a can of pumpkin (7 1/2 oz)
  • 1 cup sugar
  • 1 cup flour
  • 1 tsp bak soda
  • 1 tsp bak powder
  • 1 tsp cinnamon
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar + 2 tbsp for topping
  • 1 tsp vanilla
  • 2 tbsp butter

Preparation

Step 1

Preheat oven to 375. Line jelly roll pan with wax paper and spray with cooking spray. In bowl, beat tog eggs and pumpkin, gradually add dry ing and mix well Pour batter in pan, spread evenly with spatula. Bake 375 for 12-15 min, gently turn cake over and ease out onto plain cloth dish towel. Discard wax paper, carefully roll cake from short end, let cool 30 min (if left to cool too long it will crack when unrolling) While cake is cooling, beat tog filling ing, when cake is cool, spread gently with filling to edges, reroll, place on serving platter, sift powdered sugar onto top, cut into circles to serve...
