Chocolate Surprise Cookies

Ingredients

  • Chocolate Buttercream Frosting:
  • 1 Cup Margarine (no substitute)
  • 1 Cup Peanut Butter
  • 3 Cups Sugar
  • 4 Eggs
  • 1 tsp. Salt
  • 1 tsp. Vanilla
  • 2 tsp. Baking Powder
  • 1 Cup Cocoa
  • 2/3 Cup Milk
  • 4 Cups Flour
  • Marshmallows
  • 3/4 Cup Butter (no substitute)
  • 2/3 Cup Milk
  • 1 Cup Cocoa
  • 2 tsp. Vanilla
  • 5 1/3 Cups Powdered Sugar

Preparation

Step 1

Mix cookie ingredients (except for marshmallows). Bake at 375 until about 3/4 done (still doughy). Top each one with half of a large marshmallow. Return to oven until marshmallow gets puffy; take out and pat marshmallow flat. Cool, then frost. Frosting: Mix all ingredients and frost cooled cookies. Note: If cookies seem too dry, put marshmallows on a bit sooner.
