Pumpkin Muffies

These are pumpkin and chocolate chip cookies that resemble a muffin top more than a cookie, hence the name. They are a great alternative cookie for the holidays starting as early as Halloween and all through December.

Ingredients

  • 1/2 c. shortening
  • 1 c. sugar
  • 2 eggs (beaten)
  • 1 c. pumpkin (canned)
  • 1 bag (12oz) chocolate chips
  • 2 c. all purp. flour
  • 4 tsp baking powder
  • 1 tsp salt
  • 2 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger (powdered)

Preparation

Step 1

Mix the wet ingredients, then add the dry. Add the chocolate chips last.

Bake at 350 degrees on an ungreased cookie sheet for 15min

Check the cookies after 10min. The bottom should be light brown but the cookie will be very soft still.
