Ingredients
- 4 small skinless, boneless chicken
- breast halves (12 ounces total)
- NON STICK SPARY COATING
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1/2 cup reduced-sodium chicken broth
- 1/2 teaspoon finely shredded orange peel
- 1/2 cup orange juice
- 1 tablespoon honey
- 4 teaspoons cornstarch
- 2 teaspoons reduced-sodium soy sauce
- hot cooked rice (optional)
- orange slices (optional)
- fresh parsley (optional)
Preparation
Step 1
1. Rinse chicken; pat dry with paper towels
Spray an unheated large skillet with
nonstick coating. Preheat over medium
heat. Add chicken. Cook for 8 to 10
minutes or until tender and no longer
pink, turning to brown evenly. Remove
from skillet; keep warm.
2. Add the onion and garlic to skillet;
cook until onion is tender. Stir
together chicken broth, orange peel,
orange juice, honey, cornstarch, and soy
sauce; add to skillet. Cook and stir
until thickened and bubbly. Cook and
stir for 2 minute more.
3. To serve, spoon some of the sauce
over each serving. If desired, serve
with rice and garnish with orange
slices and parsley.
