Sauteed Zucchini and Mushrooms

Ingredients

  • 2 Tbsp. olive oil
  • 2 small zucchini (about 8 oz each), cut into 1/2" thick slices
  • 10 oz mushrooms, each cut in half
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1 Tbsp. balsamic vinegar
  • 1/2 tsp. sugar

Preparation

Step 1

In 10" skillet, heat oil over medium-high heat. Add zucchini, mushrooms, salt, and pepper and cook 15 minutes or until vegetables are browned and tender-crisp.
Stir in vinegar, sugar and 1 Tbsp. water; heat through.
