Ingredients
- 4 1/2 lb. sweet potatoes
- 1 C. sugar
- 1/2 C. butter, softened
- 1/4 C. milk
- 2 eggs
- 1 tsp. vanilla extract
- 1/4 tsp. salt
- 1 1/4 C. cornflakes cereal, crushed
- 1/4 C. chopped pecans
- 1 Tbsp. brown sugar
- 1 Tbsp. melted butter
- 1 1/2 C. mini marshmallows
Preparation
Step 1
1. Preheat oven to 400. Bake sweet potatoes at 400 for 1 hour. Let stand until cool. Peel and mash sweet potatoes. Reduce oven to 350.
2. Beat mashed potatoes, sugar, and next 5 ingredients on medium speed with an electric mixer till smooth. Spoon mixture into a greased 11x7 baking dish.
3. Combine cornflakes and next 3 ingredients in a small bowl. Sprinkle over casserole in diagonal rows, two inches apart.
4. Bake at 350 for 30 min. Remove from oven, let stand 10 minutes. Sprinkle marshmallows in alternate rows between cornflake mixture. Bake 10 min. Let stand
