Carrot Cake

Ingredients

  • 2 C. flour
  • 2 C. sugar
  • 1/4 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 4 eggs
  • 1 1/2 C. vegetable oil
  • 2-3 cups grated carrots
  • Icing-
  • 8 oz softened cream cheese
  • 1/2 C. butter
  • 1 tsp. vanilla
  • 1 box confectioners sugar

Preparation

Step 1

1. Preheat oven 375.
2. Grease and flour 2 layer cake pans
3. Sift dry ingredients together
4. Blend eggs and oil
5. Add dry ingredients and carrots.
6. Bake 30 to 40 min.

Icing-
1. Cream together cream cheese and butter.
2. Add vanilla and confectioners sugar.
