Ingredients
- 4 eggs
- 2 C white sugar+extra for tops
- 1 C vegetable oil
- 1 t vanilla extract
- 4 C flour
- 1 t salt
- 1 t baking soda
- 2 C sour cream
- 2 or 3 C fresh blueberries
Preparation
Step 1
1. Preheat oven to 400F.
2. Beat eggs with mixer for 2 minutes, then gradually add white sugar until combined.
3. Slowly add oil while continuing to beat until well combined.
4. Now stir in vanilla extract.
5. In a separate bowl combine flour, salt and baking soda.
6. Alternating between flour mixture and sour cream, gradually stir them into egg mixture, combine well but not excessively.
7. Gently fold in blueberries.
8. Pour into prepared muffin tins filled to level.
9. Sprinkle liberally with remaining extra sugar.
10. Bake for 20-25 minutes until nicely browned and spring back when touched.
