Ingredients
- 12 ounces large shrimp (raw, tail-on, thawed if frozen)
- 1 tablespoon salt-free chipotle seasoning (such as Mrs. Dash brand)
- 1 1/2 tablespoons olive or canola oil, divided use
- 1 medium bell pepper
- 1 small onion
- 1/2 cup instant rice
- 2 tablespoons shredded Cheddar cheese
- Lime wedges
Preparation
Step 1
Combine shrimp, seasoning and 1 tablespoon oil in a resealable bag. Seal bag and marinate shrimp at least 30 minutes. Dice pepper and onion. Heat 1/2 tablespoon oil in a large skillet over medium high. Saute peppers and onions 2 to 3 minutes. Add shrimp and its marinade. Cook until shrimp are pink throughout, 2 to 3 minutes. Reduce heat to low and cover. Prepare rice according to package directions. Dish rice onto plates and top with shrimp mixture. Sprinkle with cheese. Serve with lime wedges for spritzing.
