Chocolate Zucchini Bread

When I make this for my fam. it does not last long.

Ingredients

  • 2 C sugar
  • 1 C canola oil
  • 3 eggs
  • 3 tsp. vanilla
  • 2 1/2 C all purpose flour
  • 1/2 C baking cocoa
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/4 tsp. baking powder
  • 2 C shredded peeled zucchini

Preparation

Step 1

1. Beat sugar, oil, eggs and vanilla until well blended. Combine the flour, cocoa, salt, baking soda, cinnamon and baking powder; gradually beat into sugar mixture until blended. Stir in zucchini. Transfer to 2 8x4" loaf pans coated with cooking spray.

2. Bake at 350 for 50-55 min. or until a toohpick inserted near the center comes out clean. Cool for 10 min. before moving from pans.
