Ingredients
- 2 lb roast
- juice of 1 lemon
- cooking bag
- 2 onions sliced
- 8 baby carrots
- 2 medium potatoes
- 4 stalks of celery
- green pepper chopped
- clove garlic chopped
- tsp dry mustard
- tsp dried thyme
- 2 cups tomato juice
Preparation
Step 1
Place beef in shallow roasting pan. Sprinkle with lemon juice. pierce with fork; cover and refrigerate until ready to cook
Preheat 350
Prepare beef in oven bag according to directions; return to roasting pan; arrange carrots, onions and potatoes; top with celery and bell pepper
Sprinkle beef with garlic, mustard and thyme. Pour tomato juice on beef in cooking bag. Seal bag; cut slits; roast 1 hr.
