CHIPOTLE MASHED POTATOES

  • Ingredients:
  • 4 cups mashed potatoes
  • 1/4 cup diced lean slab bacon
  • 1 medium onion, cut in half & thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon finely chopped Chipotle peppers
  • 1/2 cup shredded cheddar or Parmesan cheese
  • 1 teaspoon chopped fresh rosemary

Directions:

Prepare mashed potatoes as usual, omitting butter. Fry bacon & onion together til bacon is crisp & onion is browned adding garlic during the last 60-90 seconds of cooking. Add bacon mixture to potatoes, mixing thoroughly. Check seasonings. Add Chipotles and remaining ingredients.
