- 4 cups mashed potatoes
- 1/4 cup diced lean slab bacon
- 1 medium onion, cut in half & thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon finely chopped Chipotle peppers
- 1/2 cup shredded cheddar or Parmesan cheese
- 1 teaspoon chopped fresh rosemary

Directions:
Prepare mashed potatoes as usual, omitting butter. Fry bacon & onion together til bacon is crisp & onion is browned adding garlic during the last 60-90 seconds of cooking. Add bacon mixture to potatoes, mixing thoroughly. Check seasonings. Add Chipotles and remaining ingredients.
