Ingredients
- 1 pint cherry tomatoes cut into wedges
- 1 small red onion thinly sliced
- Fine sea salt
- 1/4 cup + 2 tbsp EVOO (and more for drizzling)
- 3 tbsp red wine vinegar
- 3 Haas avocados
- Black pepper
Preparation
Step 1
Combine tomatoes, onion, a big pinch of salt, oil and vinegar.
gently toss and divide among 6 serving places
Halve, pit and clice avocados then divide on plates.
Sprinkle each plate with a small pinch of salt and drizzle with EVOO.
Finish with a few grinds of black pepper before serving.
