Autumn Apple Cake

This recipe from Meg is particularly nice made with apples from her tree.

Ingredients

  • 225 g butter, softened
  • 450 g apples
  • Finely grated zest and juice of 1 lemon
  • 225 g sugar
  • 3 large eggs
  • 225 g self-raising flour
  • 2 tsp baking powder
  • 25 g ground almonds
  • 1 tbsp brown sugar

Preparation

Step 1

Preheat ovens to 180 degrees. Peel, core and cut apples into 1 cm pieces and toss with the lemon juice. Cream together the butter, lemon zest and sugar until pale and fluffy. Beat in the eggs, one at a time, adding a bit of flour after each one. Mix in the remaining flour and baking powder, then fold in the ground almonds. Drain the apples well and add to the mixture. Grease a square Pyrex or baking pan and spoon mixture into this, lightly levelling the top and sprinkling on the brown sugar. Bake in the oven for one hour or until the top is brown and a skewer inserted into the center comes out clean.
