Imperial Crab

Ingredients

  • 1 lb of Backfin Crab Meat
  • 2 Eggs WELL beaten (Save out 2 Tbsp)
  • 4 Tbsp of Mayonnaise plus 1 Tbsp of Mayonnaise
  • 1 Tbsp of Chop Onion
  • 1 Tbsp of Mayonnaise
  • 1 Tbsp of Minced Parsley
  • 1 tsp Dry Mustard
  • 1 Green Pepper, diced
  • 1 1/2 tsp of Worcestershire Sauce
  • 1 Tbsp of Lemon Juice
  • Salt and Red Pepper to taste

Preparation

Step 1

Pick Backfin Crab Meat to check for bones.
Combine Salt, Red Pepper, Green Pepper, Eggs, 4 Tbsp of Mayonnaise, Onion, Parsley, Worcestershire Sauce, Lemon Juice, and Dry Mustard.
Put Mixture into greased individual Glass Oven Proof "Crab Shells"
Add 1 Tbsp of Mayonnaise to 2 Tbsp of Eggs set aside and put over top of each oven proof glass crab shell.
Dot with Red Pepper.

Bake at 450 degrees until hot and bubbly and light brown (10 to 15 minutes).
