Spinach Salad Dressing:

Ingredients

  • 1/2 cup red wine vinegar
  • 2-3 Tbsp Major Grey's chutney
  • 1-2 garlic cloves, crushed
  • 2 Tbsp coursely ground French mustard (I use 'whole grain' dijon - President's Choice or any other brand)
  • 2 tsp sugar
  • 1/2 to 3/4 cup vegetable oil (I always use Canola) salt, freshly ground pepper

Preparation

Step 1



Combine first 5 ingredients in blender or food processor and mix till smooth.
With machine running, slowly pour in oil til thick and smooth.
Taste and season, adjusting chutney and/or oil, if necessary.
Refrigerate. Let stand at room temp 30 minutes before adding to salad.
Enough for 8-10 servings.
