Winter Squash Cheese Casserole

Ingredients

  • 2 lbs of Winter Squash cut into 1" cubes
  • 1 Tbsp Butter
  • 1/2 Cup of Chopped Onion
  • 2 Cups (8 oz) shredded Cheddar Cheese, divided
  • 2 Eggs
  • 3/4 Cup of Milk
  • Salt and Pepper
  • 1/2 Cup soft Bread Crumbs
  • Ground Nutmeg to taste

Preparation

Step 1

Cook Squash. In a skillet melt butter over medium high heat.
Saute Onion till tender.
Put Squash in greased 2 Qt casserole
Top with Onion and 1/2 of shredded Cheddar Cheese
Beat Eggs, Milk, and seasoning together and pour over squash.
Top with remaining Cheddar Cheese
Sprinkle with Crumbs and Nutmeg
