Ingredients
- 4 lg chicken breasts cut into 3-4 pieces
- 1/4 c EVOO
- 2 T balsamic vinegar
- 1 T chopped basil
- 1 T parsley flakes
- 1 T oregano flakes
- 1 t salt
- 1 t ground pepper
- 1 lb portabella mushrooms, sliced
- 1 lg onion, sliced to size of mushrooms
- 1 1/2 c white wine
Preparation
Step 1
Brown Chicken pieces in oil. Place in 9x13 baking dish with onions & mushrooms on top. Add balsamic vinegar & spices to oil remaining in skillet. Stir wine into this mixture. Pour over chicken & vegetables.
Bake at 350 for 1 hr 45 min. Check chicken while cooking to be sure it does not get too dry. Can add more wine if needed.
