Ingredients
- 3 tbs EVOO
- 1 tbs lime juice
- 1 tbs orange juice
- 1 minced shallot
- 1/2 tsp salt
- 2 diced avocados
- 1 1/2 cups cubed jicama or radishes
- 1/2 cup cubed mango
- 1/2 cup cubed pineapple
- 2 tbs chopped cilantro
- Salt
Preparation
Step 1
1. Whisk EVOO, lime juice, orange juice, shallot and 1/2 tsp salt together in a large bowl.
2. Add the avocados, jicama, mango and pineapple, toss gently
3. Season with salt to taste.
