Ingredients
- 2 cups lettuce or any baby greens
- 2 cups seedless watermelon cut into 1/2" pieces
- 1 cup cucumber 1/2 " pieces
- 4 scallions
- 1/4 cup fresh cilantro,chopped
- 3 Tbs vinegar
- 2 Tbs veg.oil
- 1 clove garlic,minced
- 2 tsp fresh minced ginger
- 1 1/2 tsp grated lemon peel,plus the juice of the lemon
Preparation
Step 1
Whisk vinegar,oil,ginger,lemon peel and garlic in large bowl. Season to taste with salt and pepper. Add vegetables and toss.
