Ingredients

  • 1/2 cup frozen potatoes O'Brien
  • 1/2 cup spinach
  • 1/2 cup chopped mushrooms
  • 3/4 cup fat-free liquid egg substitute
  • 1/4 cup chopped tomato
  • 1 wedge the laughing cow light creamy Swiss cheese
  • Optional: salt, black pepper, Italian seasoning, ketchup, salsa

Preparation

Step 1

Bring a skillet sprayed with nonstick spray to medium-high heat on the stove. Add potatoes, spinach, and mushrooms. Stirring occasionally, cook until potatoes have thought, spinach has wilted, and mushrooms have softened, about 3 min. Transfer the contents of the skillet to a bowl and set aside.

Remove skillet from heat, re–spray, and return to medium-high heat. Add egg substitute, tomato, and chief, breaking the cheese into pieces as you added. Scramble until egg substitute is fully cooked about 3 min.
Add eggs scrambled to the bowl and stir to mix. If you like, season to taste with salt, pepper and Italian seasoning and topped with ketchup or salsa.
