Ingredients
- Vinaigrette:
- 2 T plus 2 t olive oil
- 2 T lemon juice
- 1 T pomegranate molasses
- 2 t ground sumac
- 1 clove garlic, minced
- Salad:
- 1 medium head romaine, halved and sliced into 1/2 inch ribbons
- 2 C cherry tomatoes, halved
- 4 small Persian cukes, diced
- 1 small red bell pepper, diced
- 1 small yellow bell pepper, diced
- 3 green onions, thinly sliced
- 1/3 c coarsely chopped parsley
- 3 T thinly sliced mint leaves
- 1 1/2 c plain pita chips, coarsely broken up
- 1/2 c feta
Preparation
Step 1
To make vinaigrette, whisk together all ingredients in a small bowl.
to make salad, toss together everything but pita and feta. Add vinaigrette and season with salt and pepper. Sprinle pita and feta over top and toss.
