Ingredients
- 1 tsp baking soda
- 2 1/2-3 cups flour
- 1 cup canola oil
- 1 1/2 cups brown sugar
- 3/4 cup white sugar
- 2 large eggs
- 1/2 cup shredded unsweetened coconut
- 1 cup salted dry roasted peanuts (or 1 cup choc. chips) (or 1 cup raisins)
- 1 1/2 cup oats
Preparation
Step 1
Mix the baking soda into the flour.Set aside. Cream the oil and sugars. Add the eggs. Gradually add flour mixture. Fold in the coconut,peanuts and oats. Refrigerate dough for 15 min. Preheat oven to 375. Form the dough into balls. Place cookies on cookie sheet lined with parch. paper. Bake for 8-10 min or until very light brown.
TIP: 1.
Don't double recipe in one bowl(it gets too dry and hard to mix)
TIP: 2. for chewy cookies,slightly underbake them
