Squash Casserole

Ingredients

  • 3 lb squash, 1/4" thick
  • 1 small onion, chopped
  • 4.5 tsp salt
  • 16 saltines
  • 1/5 c sharp cheddar
  • 1/2 c mayo
  • 1 large egg, slightly beaten
  • 2 TB butter, melted
  • 1/4 tsp pepper & salt

Preparation

Step 1

Heat oven to 350°. Cook squash,onion and salt in boiling water for 25 minutes. Drain well. Mash with fork. Crush 10 crackers and stir in mixture. Stir in 1/2 c cheese and remaining ingredients. Spoon into lightly greased dish. Crush 6 crackers and sprinkle over mixture. Top with 1 c cheese. Bake uncovered 30 minutes.
