Farmer’s Breakfast

Ingredients

  • Redskin potatoes, diced
  • Onion, diced
  • Green pepper, diced
  • Parsley, chopped
  • garlic
  • mushrooms
  • butter
  • 6 eggs
  • 4 oz. sour cream
  • 1 tomato
  • 1 C cheddar cheese, grated

Preparation

Step 1

In skillet, sautee potatoes, onion, bell pepper, parsley and garlic in butter. Add mushrooms.

Scramble eggs in bowl, add sour cream. Pour into potato mixture. Add diced tomato and cheese.
