Roast Pork with Cherry Sauce

Ingredients

  • 4-6 lb pork loin roast (or tenderloin)
  • 12 oz. cherry preseves
  • 1/2 cup light corn syrup
  • 1/4 cup brandy or cherry liquor
  • 1/4 cup red wine vinegar
  • 1/4 teas. salt
  • 1/4 teas each cloves, nutmeg & cinnamon
  • 1/8 teas pepper

Preparation

Step 1

SAUCE:
Combine all ingredients, bring to a boil, boil for one minute Serve over
meat.

Roast meat at 325 degrees, basting with sauce several times the last 30
minutes.

I cook mine on the gas grill (on low setting), brown all sides of pork first. Put in large sheet of foil with sauce basting and place on top ledge with foil slightly sealed. Browning meat takes about 15 min to do all sides and then another 30-40 min. in foil.
