Ingredients
- 6-8 ripe tomatoes, roughly chopped
- 2 red onions, roughly chopped
- 2 garlic cloves,roughly chopped
- 1 28 oz. can crushed plum tomatoes
- 4 cups chicken broth
- 3 tbsp olive oil
- 1 tbsp dried oregano
- 6-8 basil leaves (keep some for garnish)
- salt and pepper to taste
Preparation
Step 1
1. Set oven to broil.
2. Mix tomaotes, onions, garlic, oregano & olive oil in a bowl with salt and pepper.
3. Place on baking sheet. Broil for 10 min. Rotate tray to char mixture.
4. Lower oven to 350F. Roast mixture for 30 mins.
5. Add canned tomaotes, broth and basil to pot. Bring tp boil and simmer. Add oven roasted tomaotes & simmer for about 15 mins.
6. Roughtly puree soup. Let cool slightly, then fully puree.
7. Roughly chop basil for garnish. Drizzle with olive oil.
