Christmas Shrimp Kabobs

Ingredients

  • 3 cloves garlic, finely chopped
  • 2 tablespoons fresh lime juice
  • 1 tablespoon ginger root, peeled and grated
  • 1 tablespoon soy sauce
  • 1 tablespoon dark sesame oil
  • 1 teaspoon crushed red pepper
  • 12 large shrimp, peeled and deveined, tails attached
  • 1 medium yellow bell pepper cut into 1 inch squares
  • 1 medium red bell pepper cut into 1 inch squares
  • 12 small mushrooms
  • 6 scallions cut into 1 inch pieces
  • 12 6-inch skewers

Preparation

Step 1

1. Combine first 6 ingredients in a food safe plastic bag. Place shrimp and peppers in bag and marinate in refrigerator for 1 hour.
2. Lightly oil broiler pan with cooking spray. Remove shrimp and peppers from marinade, reserving marinade. Alternate yellow and red bell peppers, mushroom, shrimp and green onion pieces on skewers. Brush with reserved marinade, discarding rest. Arrange on a broiler pan
3. Broil 4 inches from heat, 3 minutes per side, turning once, until shrimp are pink and vegetables are crisp-tender.
