Ingredients
- 4-6 potatoes cubed with skin on
- 1 can chicken broth
- 6 pieces bacon crisp, crumbled
- 2 celery stalks, chopped
- 1/4 cup chopped carrots
- 1 small onion, chopped
- salt and pepper for taste
- 1/3 of the chunk of Velveeta
- 12 oz pkg of cheddar cheese
- 2 cups sour cream
Preparation
Step 1
1. cube potatoes and boil until soft.
2. in another pan soften onion, celery, carrots. once potatoes are done, drain and put back into pot. add veggies and then add the broth and bring to a slow boil.
3. crisp and crumble bacon, set aside. add cheese and melt it.
4. serve in a bowl with a spoonful sour cream and top with bacon
