Ingredients
- Patties:
- 2 Lbs potatoes
- 2 Med onions, chopped
- 3 T minced parsley
- 2 T Flour
- 1/2 T garlic powder
- 2 T water
- 2 T butter
- Sides:
- 2 T oil
- 16 oz sliced mushrooms
- 1 lg onion, thinly sliced
- 2 T Soy Sauce, salt and pepper
- pkg rolls
Preparation
Step 1
Preheat oven to 350
To cook potatoes: place in a pot and cover with water. Bring to a boil, reduce heat, cover and cook until soft. Drain and cube potatoes (save 1 1/2 C diced potatoes for meal 4)
Place potatoes, chopped onion, parsley, flour, garlic powder and water into food processor and blend til mixed. Form mixture into patties and roll in flour. Place on shallow baking dish, butter the tops with 1 T butter and bake for 15 minutes.
Cook mushrooms, onions and soy sauce and seasonings in oil until tender. Serve on top of patties.
Heat rolls and serve on side.
