Shrimp & Asparagus

Ingredients

  • 1 lb fresh asparagus
  • 1 lb linguine
  • 4 cloves garlic, minced
  • 1/2 c evoo
  • 1 c butter
  • 1 T lemon juice
  • 1 lb medium shrimp
  • 1 lb thinly sliced mushrooms
  • 1/2 c grated parmesan cheese
  • salt & pepper

Preparation

Step 1

Steam asparagus until tender, chop and set aside. Cook pasta al dente. In large pan, saute garlic in oil until golden brown. Place butter & lemon juice in pan. Heat until melted. Add shrimp & cook until pink. Add mushrooms & asparagus & cook until mushrooms are tender. Toss shrimp & vegetables with pasta & sprinkle with cheese. Salt & pepper to taste. Serve immediately.
