Scallop Saute

Ingredients

  • 2 T butter
  • 1/2 t minced garlic
  • 1 lb scallops
  • 2 c coarsely chopped ripe tomatoes
  • 1/4 t salt
  • 2 T chopped parsley

Preparation

Step 1

Melt 1 T butter in skillet. Add garlic and cook over low heat 1 min. Stir in scallops, tomatoes and salt. Cover and cook 2-4 mins, stirring once or twice, until scallops are opaque at centers. Stir in remaining butter. Remove from heat and stir in parsley.
