Apple Dip

This is one of those great base recipes that serve as a platform for your own tastes and creativity. Tinker with it. Take out some of that sugar, add chopped walnuts, or peanut butter, or rice krispies, or graham cracker crumbs. Lighten it a bit with no-fat sour cream or cottage cheese, or plain or vanilla yoghurt, or substitute tofu cream cheese for the dairy kind. Flavor with a sprinkle of cinnamon. Add some heat with a few drops of Tobasco or a pinch of cayenne. Thin it with apple juice, lemonade, or Cabernet. Ingredients

  • 8-oz bar of cream cheese, softened
  • 1/2 cup (or less) brown sugar
  • 1 Tablespoon vanilla extract
  • (I cut both the sugar and vanilla in half.)

Preparation

Step 1

Stir together the cream cheese, brown sugar, and vanilla extract until the sugar has dissolved, and the mixture is smooth. Or, use an electric mixer and beat until it reaches your desired consistency.

Serve with sliced apples for dipping (toss them with a bit of lemon juice to keep them from turning brown; lemon-lime soda will also work).
