Ingredients
- 2 butternut squash peeled and cut up into cubes
- 2 granny smith apples diced (leave peel on)
- 1 onion finely diced
- 1 sweet potato peeled and diced
- 1 oz olive oil
- Salt and pepper to taste
- 1 tsp cinnamon
- 1 tsp nutmeg
- 8 cups chicken stock
- 1 cup of apple cidar
- 1/2 cup heavy cream ( can cut back on cream)
- 1/4 cup maple syrup
- Cornstarch mixture for thickening
Preparation
Step 1
1. In a large pot, heat oil.
2. Plce the onions in pot and saute until transluscent
3. Add the sqush, apples, and sweet potato and continue to saute until they start to soften
4. Add cidar and stock and bring to a boil. Reduce heat and simmer until tender. About 30 minutes
5. Puree mixture in a blender and the pour into another pot
6. Bring soup back to a boil and add cream
7. Thicken soup if needed
8. Add the maple syrup
